Bees Knees – the name cracks me up. It’s a term that was coined in the early 1920’s during the Prohibition Era and stuck to this very simple, but delicious refreshing cocktail. Bees Knees means “something great.” I think what makes this particular Bees Knees great is the addition of edible flowers. Seems fitting since the beverage tips it’s hat to bees. You only need a few ingredients to make this cocktail, along with an edible flower of your choice. We chose natsturtiums..

INGREDIENTS

Makes 2 cocktails

  • 4 oz good gin (or vodka – we had these with vodka and it was great!)
  • 1-1/2 oz fresh lemon Juice
  • 1-1/2 oz Honey Syrup (recipe below)

In a cocktail shaker, combine the gin, honey syrup, and lemon juice with ice. Cover and shake vigorously for about 10 seconds. Strain into a chilled coupe glass (we used a martini glass as you’ll see in the photo!) and serve with an edible flower and a lemon twist or slice.

HONEY SYRUP

  • 1/4 C hot water
  • 1/4 C honey

In a liquid measuring cup, combine the honey and hot water. Whisk to incorporate. Set aside to cool to room temperature. Refrigerate until ready to use. This will be more than you need for two cocktails, so the remaining amount can be store in the fridge for up to two weeks.
