Tomatoes and bacon are probably two of our favorite ingredients on a good sandwich, but I think I might like this one just as much. Starting with a good bagel, toasted, a slathering of quality cream cheese, sprinkling of fresh herbs, a thick slice of summer ripened tomato, cracked black pepper, sea salt and fresh watercress. That’s it. It’s summer heaven.

Open Face Tomato Cream Cheese Bagel Sandwich
- One bagel, sliced in half. Toasted (everything, poppyseed, sesame seed, pumpernickel, or onion are best)
- 2-3 T cream cheese
- 1-1/2 T chopped mixed organic herbs (parsley, chives, basil)
- 1 ripe tomato, sliced 1/8th inch thick (beefsteak, heirloom, early girl — whatever you like!)
- 2-3 T watercress, sprouts, or microgreens
- black pepper & sea salt
Toast bagel, set aside. Mix cream cheese with herbs. Spread each half with 1-1/2 tablespoons of cream cheese mixture. Top with sliced tomato, greens of choice and cracked black pepper and salt.
