I found this recipe some time ago and saved it for summer cocktailing. I can’t take credit for its creation, but I am sharing because it’s so good and screams summer. This would be good with or without the booze!
Makes 2 cocktails
INGREDIENTS
- 3 oz Gin ( or an additional ounce if you want a little more kick)
- 1 cucumber (we used an English cucumber)
- Ice, for both shaker and cocktail glass
- 1 oz elderberry liqueur
- 1 oz simple syrup
- 1 oz lime juice, fresh squeezed
- 6 oz sparkling water
- Garnishes: cucumber ribbons, mint, flowers, sliced lime
To get cucumber ribbons you can use a mandolin or peeler and slice cucumber lengthwise. You’ll need one ribbon for each cocktail. In a shaker, add one cup ice, 1/2 cup cucumber slices and gin and muddle. Add elderberry liqueur, simple syrup and lime juice and shake well. Fill the glasses with ice. Place a cucumber ribbon in each glass, positioning it next to the glass. Strain equal amounts of shaker mixture over the iced glasses. Garnish with mint, flowers and a slice of lime.
