Apparentlly I can food now.  Seriously, in the midst of a CANdemic here. I’m not even coming close to canning the quantities my Mother and Grandmother used to do for days on end. This processing has taken its toll on me, but it feels good to have a few good things in the pantry for when the next crisis kicks in. Just kidding. Nothinggg is going to happen …
So far, this harvest season I have canned dill pickles, sweet pickles, bread & butter pickles, pear honey, tomato jam with cardamom, smoky fire roasted tomato salsa, tomatillo salsa and herb marinara. Next up – more pickles, some kind of relish and sauerkraut. Then I think I’m done.
