This summery salsa comes together in minutes and not only adds amazing sweet and savory flavors to whatever you serve it with, but the vibrant colors are so gorgeous it’s hard not to dive in immediately. If you can wait 30 minutes before diving in, the flavors blossom and make it one-hundred times more flavorful. My favorite way to enjoy this salsa is with plump grilled shrimp and big homemade blue corn tortilla chips. It’s also fabulous on chicken, pork or beef or grilled caramelized onion & jack cheese quesadillas. Dive into this one!
- 1 ripe mango, peeled, seeded and chunky diced
- 1 avocado, peeled and chunky diced
- 3 ripe heirloom tomatoes (if you have them) or other tomato
- 1 jalapeno pepper, seeded, minced
- 1/3 C fresh cilantro, rough chopped
- 2-3 cloves of fresh garlic, minced (approximately 1-1/2 tablespoons)
- 1/2 C red onion, diced
- 1/4 C fresh Italian parsley, rought chopped
- 1 tsp sea salt
- 3 T fresh lime juice
- 2 T extra virgin olive oi
In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, garlic., red onion, cilantro, parsley. Toss with salt, lime juice and olive oil. Chill for 30-60 minutes before serving.
